Lemon Ricotta Stuffed Syrian Pancakes with Lavender Passionfruit Syrup

These stuffed Syrian pancakes are insanely impressive and surprisingly simple to make.  The batter is slightly thinner than the typical pancake batter we see in the States, and the small, thin pancakes are stuffed with a tart lemon ricotta filling.  This recipe takes things to the next level by drizzling a lavender passionfruit syrup overtop before dipping the cooked pancakes in pistachios.
