6. Use a great tomato

If you thought any old tomato would do for your Perfect Cheeseburger, think again. A flavorful, dense tomato that has a low water content and is large enough to cover a meat patty in one slice is what you are aiming for. Varieties that meet these requirements include Beefsteak,  Brandywine, Paul Robeson and heirloom. If you want something a bit more unusual, consider a variety like the striking gold and orange Earl of Edgecombe. If you can't get your hands on any of these varieties, don't despair. Any ordinary tomato can be enhanced by laying the slices on paper towel and sprinkling with salt and pepper for a few minutes. This will help to draw excess juice out of them, an enhance their flavor.
