9. Cook with care

This is the critical part. First cook the patties with the dimple facing up, until you see the juices release to the surface (about 4 - 5 minutes for medium), then flip and repeat on the other side. Never press on the patties or flatten with a spatula in an attempt to speed up the cooking, as all you will do is press out the delicious flavors, and rely on a thermometer to check that it is properly done (about 155° F for medium).
