10 Steps To The Perfect Guacamole

In Mexico, guacamole is traditionally made with a molcajete, which is a kind of mortar made from basalt. If you don't have a molcajete, a standard mortar and pestle works just as well, but even mashing the avocado with a fork, whisk or even potato masher will give excellent results. Chunky or smooth, there is no 'right' way to mash guacamole, so experiment until you find your favorite.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
