Now you've made the perfect guacamole, how do you stop it from going brown too quickly? Despite the old wife's tale, putting the avocado pit in with the guac won't stop it from becoming oxidized, but there is another way. Covering your dip in Saran-wrap and actually pressing it onto the surface of the dip to create an oxygen seal is a very effective and easy way to keep it green for longer. If by some miracle you actually have left-over avocado pieces, you can submerge them in water in the fridge to keep them fresh and away from oxygen— their density and high fat content means it will take hours before they become soggy.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
