Focaccia Genovese

The existence of this thick Italian flatbread came about by chance, as is the case with many foods in Italian cuisine. When working long hours, Italian bakers would bake pieces of bread dough that hadn't fully risen and eat them as a late-night snack. Nowadays, almost every region in Italy has its own kind of local focaccia. Focaccia Genovese, for example, has very specific characteristics: 1-2 centimeters high with holes in the surface and a slightly glistening surface from being brushed with extra-virgin olive oil. It's soft and spongy, and some Genoese people even like to eat it dunked in their morning cappucinos. We say, don't knock it 'til you try it!
