Jitlada - Los Angeles, CA

At Jitlada in LA, spice fiends can count on their taste buds being fired up properly. The menu is already incredibly piquant, but if you want to take things a step further, you can try the Dynamite Challenge, which involves eating an insanely hot dish with a spicy mint leaf sauce or curry sauce with your choice of meat, poultry, fish, seafood or tofu. It's apparently made with ghost peppers, among others. If your heat tolerance isn't quite there, start practicing with other dishes. Once you become a "regular," you can even try ordering the Jazz Burger, an off-menu item served protein-style in a lettuce leaf; it isn't quite as scorching but still packs a hot punch. Though the chef won't reveal her recipe, you can bet on dried chilies being hidden in the beef patty, which then gets smothered with fresh chilies for serving.
