If you think you've got a good tolerance for authentic Thai spice, then try testing it out at Pearl Cafe in Florissant, Missouri. It's not only one of the best Thai restaurants in St. Louis but also offers its customers a spicy challenge that few are able to conquer. For a normal meal, you'd choose your spice level between 1 and 5 (5 being pretty excruciating apparently), but for the restaurant's Spicy Challenge, you start at level 25, then work your way up in increments of 25 to reach 100. You choose your meal and are allowed to drink water or beer. But you must finish your plate by yourself in 45 minutes. A waiver must be signed before participating. We can hardly imagine the jump in spice level from 5 to 25, let alone from 25 to 100, so we'd be fine sticking with some shrimp pad thai at level 3, pictured here.

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
