Lavash - Armenia

Lavash bread is enjoyed in many countries throughout Western and Central Asia, but it's an especially honored food in Armenia, where its "preparation, meaning and appearance of traditional bread as an expression of culture in Armenia" was inscribed on UNESCO's list of Intangible Cultural Heritage. Made with flour, water and salt, it's a round flatbread that's traditionally baked in a tandoor oven and has a slightly tart flavor. With a charred, bubbly appearance and a partly crunchy, partly soft texture, lavash is delicious with any array of mezzes, soups, stews, curries, chili, etc. It's also great as a bread for wrapped sandwiches or kebabs. And if you really want to get creative, you can use it as the base for homemade pizza!
