Hungarian Cabbage and Noodles (Haluska)

Prepare egg noodles, according to package directions
- 1 stick of butter
- 1 large onion peeled and cut in strips
- 1 small head of cabbage, cut into strips
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 box or bag of large egg noodles, cooked and drained
- 1/2 cup sour cream
Red Beans (Habichuelas)

Put the oil in a deep saucepan, turn the heat to medium and add the jamón and salchichon
- 2 teaspoons of olive oil
- 2 oz. of diced lean cured ham (jamón de cocinar)
- (or a strip bacon if you don't have ham)
- 2 oz. salchichon diced
- 1 can of red or pink beans
- 1/2 small onion, diced
- 1/2 cube or 1 teaspoon chicken bouillon
- 1 1/2 cans of tomato sauce (8oz.)
- 1 packet of sazón
- 2 tablespoons of sofrito
- 1/2 can of water (use the tomato sauce can)
Potato Pancakes

Peel potatoes and onions, and finely grate using a box grater or food processor,
- 5 large russet potatoes
- 2 medium yellow onions
- 1/2 cup flour
- 2 eggs
- Kosher salt, to taste
- Ground white pepper, to taste
- Crisco or vegetable oil, for frying
Potatoes Au Gratin

Preheat oven to 375 degrees
- 4-5 large russet potatoes, peeled & sliced 1/8 inch thick
- 1/4 cup butter
- 1/2 sweet yellow onion, diced
- 1 tablespoon flour
- Sea salt and fresh cracked pepper to taste
- 2 cups of milk
- 2 cups of extra sharp cheddar cheese, shredded
- 1/4 cup bread crumbs
Weekend Potato Salad

Put a LARGE pot of water up to boil
- 6-8 large russet potatoes
- 1 cup finely chopped onion
- 1 cup finely chopped celery
- salt & pepper to taste
- 1 Tablespoon lemon juice
- 1 cup mayonnaise
- ½ cup sour cream
- 5 hard boiled eggs
Potato Noodles

PREPARE DOUGH: Mix all ingredients together lightly in bowl
- DOUGH:
- 2 cups flour
- 1 egg
- 1/2 cup warm water
- 1 teaspoon salt
- 2 tablespoons oil
- FILLING:
- 4 large potatoes, peeled
- 2 onions chopped
- 2 eggs, beaten
- salt and pepper
- 1 tablespoon Crisco
- EGG WASH:
- 1 beaten egg mixed with 2 tablespoons water
- TOPPING:
- 1 tablespoon butter
- 1 cup plain breadcrumbs
Eggplant Rollatini

Wash your eggplant and cut off stem end
- (Eggplant):
- 2 large eggplants (the longer the better)
- 1 cup flour
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 2 eggs
- 1 tablespoon water
- 2 cups bread crumbs
- (Filling):
- 1 10ounce
- package of frozen spinach
- 15 ounces of Ricotta cheese
- 1 egg
- 1/4 cup Parmesan cheese
- 1 teaspoon garlic salt
- 1/4 teaspoon oregano
- 1/4 teaspoon parsley
- 1/4 teaspoon basil
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 12 thin slices ham or prosciutto
- (Topping):
- 1 cup pasta sauce
- 1 cup shredded mozzarella cheese
Walnut Crescent Cookies

- 1/2 lb butter
- 1/2 cup powdered sugar
- 1 teaspoon vanilla
- 2 cups flour
- 3/4 cup chopped walnuts
- powdered sugar for dusting

- 1/2 cup vegetable shortening
- 2 eggs
- 2 cups flour

- 1 teaspoon salt
- 1 cup butter
- 3/4 c sugar
- 3/4 cup brown sugar
- 1 teaspoon vanilla
- 2 eggs
- 2 cups chocolate chips
- 1/2 cup chopped walnuts (optional)
