Arroz Con Gandules

In a medium size caldero add the oil, sofrito, sazon, oregano,and jamon
- 2 cups rice (rinsed)
- 4 cups of hot water
- ½ cup sofrito
- 1/2 teaspoon oregano
- 1 can of gandules
- 2 tablespoons of alcaparrado (capers and olives mixed together)
- 1 packet of Sazon with achiote
- 1 small can tomato sauce
- 1/2 chopped jamon de cocinar or salchichon
- 3 tablespoons of oil
- Salt & pepper to taste
Chicken Marsala

Beat eggs in large bowl, season with salt, pepper, garlic powder, and milk
- 3-4 lbs thin sliced chicken cutlets
- 2 cups breadcrumbs (seasoned or plain, your choice)
- 4 eggs
- 1/2 cup milk
- salt & pepper to taste
- 1 teaspoon garlic powder
- 1 stick butter
- 2-3 cups sliced mushrooms
- 2 jars brown gravy
- 2 jars water
- 1/2 to 3/4 cup Marsala wine
- oil for frying

Add olive oil to pot and heat, season chicken with salt, pepper, garlic powder, and Adobo
- one chicken, cut up, or chicken pieces
- 1-2 green peppers sliced
- 1 large onion sliced
- 1 teaspoon garlic powder
- salt and pepper to taste
- 4 Tablespoons olive oil
- 2 Tablespoons vinegar
- 1/2 cup olives
- 1 teaspoon Adobo
- 3 Bay leaves
- 1 small can tomato sauce
- 1 cup water

Pasta with Sausage and Broccoli Rabe

Cook the pasta according to the package directions
- 1 pound orecchiette pasta or small shells pasta
- 1 tablespoon olive oil
- 1 pound sweet Italian sausage, casings removed
- 2 cloves garlic, finely chopped
- 2 1/2 cups chicken broth
- 1/8 teaspoon crushed red pepper
- 1 bunch broccoli rabe, stems cut off
- 4 tablespoons butter, cut into pieces
- 1 1/2 cups grated Parmesan
