Shepherd's Pie

By brendasullins
This is a good hearty meal on a cold evening- makes 2-4 servings, usually with leftovers
- 1 lbs ground Italian sausage (my favorite), ground beef, ground turkey or ground veal
- 1 can mixed vegetables- or small can of corn and small can of peas
- Mashed potatoes (4oz packet of instant which equals about 3 cups prepared)
- 1 can Cream of Mushroom Soup (or 1 jar gravy)
- 1 packet of Onion Soup mix (optional)
- Seasonings to taste- Garlic Powder, Salt, Pepper, Italian Seasoning, Chili Powder, Etc.
- Butter- 1/2 stick melted
Spanish Rice

This is a great side dish for Taco night, or add chicken and make it a dinner all by itself
- 1 cup white rice
- 1 can stewed tomatoes (drained and separated- keep the liquid)
- 1/2 stick of butter
- *Optional* 1 or 2 cooked boneless skinless chicken breasts (shredded or cubed)
Hot Chile Grilled Pork Tenderloin with Avocado and Tomatillo Salsa over Couscous

This is a quick and easy dish to prepare and can be ready in about 30 minutes
- Avocado & Tomatillo Salsa:
- 1/2 cup finely diced tomatillo (about two tomatillos)
- 1/2 cup finely diced avocado (about one avocado)
- 1 tablespoon minced red onion
- 1 tablespoon lime juice (or more according to taste)
- 1 tablespoon finely chopped cilantro leaves
- 1/2 tablespoon finely chopped and seeded jalapeno chili pepper
- 1/8 teaspoon ground cumin
- 1/2 teaspoon dried Mexican oregano
- salt and pepper to taste
- Pork Tenderloin:
- 6 ounces pork tenderloin, cut into 1/2 inch thick slices
- 3 tablespoons olive oil
- 1/2 cup couscous
- 1 cup good chicken stock
- 1/2 teaspoon salt and freshly ground pepper
- Cayenne or Chili pepper to taste
Biscuits & Spicy Country Gravy

Cook biscuits according to package directions
- Pillsbury Biscuits
- 1 lb. Spicy Italian Ground Sausage (Or mild sausage if you like less heat)
- 1/2 Cup All-Purpose Flour
- 2 2/3 Cup Milk
- Salt and Pepper to taste
Chocolate Cake in a Mug

This is an awesome, tasty recipe and I think that almost anyone could make, and enjoy, this quick and easy treat
- 4 Tablespoons flour
- 9 Tablespoons hot chocolate mix (approximately 3.5 packets)
- 1 Egg
- 3 Tablespoons water
- 3 Tablespoons oil
- Cooking Spray
Breakfast Casserole

Place bread on bottom of buttered 8×8 baking dish
- 4-6 slices of crustless bread, preferably sourdough
- 12 oz. cooked, drained sausage (I prefer Jimmy Dean’s Sage)
- 4 eggs
- 2 cups whole milk (Do NOT use low fat! This will separate and make casserole watery)
- 1 cup 1/2 and 1/2
- 1/2 tsp. dry mustard
- salt and pepper to taste
- dash of Tabasco
- 1/2 tsp. Worcestershire
- 1/2 cup grated cheddar
Tamale Bake

Brown the meat with the diced onions
- 1 lb of ground beef, chicken or turkey (I have grown to like it with ground chicken or turkey)
- small white onion or half of a bigger one, diced.
- 1 jar of your favorite salsa
- 1 small can of green chilies (diced)
- 1 can of mexi-corn, or 1 cup of plain corn
- 2 cans of black beans
- Fresh or already shredded cheese
- 2 boxes of Jiffy Corn bread mix
Cheese & Chili Enchiladas

Beat 8 oz. softened cream cheese until smooth
- 8 oz. softened cream cheese
- 1 cup grated Parmesan cheese
- 4 oz. can of chopped green chilis
- 1/4 cup chopped green onions
- 6-8 6-inch tortillas
- 1 cup of chunky salsa
- Shredded Cheddar Cheese
- *Optional:
- 1 cooked, shredded chicken breast
- Chili Power, Ground Cumin & Garlic Powder (to taste)
