Side- Tartar sauce

In a small chopper bowl, combine all the ingredients
- 1/2 cup good mayonnaise
- 2 tablespoons small-diced pickles
- 1 white wine vinegar
- 1 teaspoon mustard
- Pinch kosher salt
- Pinch freshly ground black pepper
Chicken- Jalfrezi

Marinate chicken in all the spices, for a couple of hours, or even overnight
- 1kg chicken fillet-cubed
- 1 tsp green masala
- 1/2tsp ginger garlic
- 1tsp dhana jeeroo
- 1/2 tsp aminas wonder spice
- 1/2 tsp aminas tikka spice
- 1/2 tsp salt or to ur taste
- 1 tsp peri peri sauce
- 1/4 tsp arad
- 1/4 tsp chilli powder
- 1/4 tsp garlic
- 1/2 cup tomato sauce
- Green pepper cubed
- 1 onion cubed
Vegetables- Roasted

1. In a bowl combine all Marinade ingredients and mix well
- The vegetables:
- 2 sweet potatoes with peel, thickly sliced
- 1 small butternut, cut into big cubes
- 1 large Red Pepper cut into cubes
- 2 cobs sweetcorn cut into 2cm slices
- Marinade:
- 1/4 cup olive oil
- 2 Tbsp Chilli sauce
- 1tsp crushed garlic
- 1tsp freshly ground black pepper
- 1tsp Crushed Cumin
- 1tsp Salt
- Sauce:
- 250ml Fresh Cream or Reduced Fat cream
- 2 Tbsp Mustard sauce
- 1/2 cup sweetcorn (creamstyle)
- 1/2 cup Coriander leaves chopped.
Steak- Saucy Rump

Marinate steak with spices, leave for a few hours or overnight
- *rump steak cut into strips.
- *1/2 tsp lemon pepper.
- *1/2 tsp black pepper pwdr.
- *1/2 tsp steak and chops spice.
- *1tsp crushed red chillies.
- *1/2 tsp chilli pwdr.
- *1 tsp fine salt.
- *Ginger garlic.
- *lemon juice.
- Onion rings
- 1 med Green and red peppers (strips)
- 2 carrots (jullieaned)
- Sauce:
- 2 tblsp tomatoe sauce.
- 2 tblsp steers peri peri or crystals sandwich sauce.
- 2 tblsp woester/soya sauce.
- 1 tblsp mayonaise
Chops- Masala saucy

Marinate chops in the above spices for a few hours or over night
- 1 kg chops
- green chillies
- Ginger garlic
- vinegar
- dhaniya
- 2 tbspn ketchup
- steak n chops spice
- 3 tbspn tin tomato
- Salt n black n pepper to ur taste
- Worcester sauce
Salad- Almond & sesame Topped

Wash and pat dry (or use a salad spinner) all salad ingredients
- Cucumber (Julienned)
- Pineapple (Julienned)
- Red Pepper (Julienned)
- Green Pepper (Julienned)
- Dates
- Feta Cheese (Julienned)
- Lettuce
- Carrots (Julienned)
- Tomato (Julienned)
- Dressing:
- 1/2 cup Mayo
- 1/4 cup mustard sauce
- 1 Tblsp sugar
- Lemon juice (to taste)
- 1 Tblsp Soya Sauce
- 1/2 tsp salt
- Freshly ground pepper
- Nuts:
- 2 cups Almonds sliced
- 2 Tblsp Sesame seeds
- Roast on slow on the stove, mixing frequently. When roasted remove and add: 2 tsp Fine red chillies and 1 tsp salt.
Fish- Lemon Garlic Tilapia

Preheat oven to 375 degrees F (190 degrees C)
- 4 tilapia fillets
- 5 tablespoons fresh lemon juice
- 1 tablespoon butter, melted
- 1 tablespoon olive oil
- 1 tsp garlic, finely chopped
- 1 teaspoon dried parsley flakes
- salt and pepper to taste

Heat the oven to 250°F and arrange a rack in the middle
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons kosher salt
- 2 large eggs
- 2 cups whole milk
- 8 tablespoons unsalted butter (1 stick), melted
- 2 cups shredded Irish cheddar cheese (about 5 ounces), such as Dubliner
Pide- Turkish pizza

Combine flour, yeast, sugar and salt in a bowl
- 500g (3 1/3 cups) plain flour, sifted
- 1 teaspoon (7g/1 sachet) dried yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 375ml (1 1/2 cups) warm water
- Olive oil, to grease
- 2 teaspoons sesame seeds
- 1 teaspoon nigella seeds
- 1 egg yolk
- 1 tablespoon olive oil

- 2 tsp chilli sauce
- 2 tsp mayo
- 2 tsp mustard sauce
- 1/2 tsp chicken spice
- 1/2 tsp tikka spice
- 1 Tbs yoghurt
