Asafoetida

This vibrant yellow spice is made of dried latex that comes from the tap root of a special herb cultivated in India. Similar to turmeric, it works as an efficient digestive aid and flavor enhancer. It's an especially important herb in vegetarian dishes, known for its overpowering smell but also its mellow, slightly garlicky flavor when used in Indian cuisine.
