Las Cuatro Milpas - San Diego, CA

Don't come to Las Cuatro Milpas in San Diego for the atmosphere or with the expectation of putting anything on the 'Gram other than what's on your plate. Here in the city's Barrio Logan neighborhood, the legendary third-generation Mexican restaurant has maintained its familiar homey feel, with communal seating arrangements around picnic tables and old-fashioned napkin dispensers. Locals and tourists start lining up at 8:30 am for the incredible fried tacos, served rolled up and loaded with a trifecta of sour cream, cotija cheese and lettuce. The rest of the menu is short and sweet and you'd be hard pressed to spend more than 10 bucks. More importantly: it's cash-only.

Get this: Honestly, everything on the menu is worth trying, but if you're an out-of-towner, definitely go for the legendary rolled tacos—they're a must!

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
