Located in the Kerns neighborhood of central/southeast Portland, this casual Mexican eatery specializes in massive tortas (sandwiches) stuffed with all kinds of delicious ingredient combos on toasted telera rolls. You've got the go-to carnitas and chicken pibil but also the giant hamburguesa (double Mexican cheeseburger) and the desayuno (breakfast torta with braised beef and fried egg). Not in a sandwich mood? Opt for the equally delish Cart Bowl with fresh salad, veggies, beans, rice, cheese and your choice of protein. These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
