For some of the best tamales in New Mexico, head to El Modelo, an Albuquerque institution since 1929. Virtually everything on the menu is less than 15 bucks, and the food is filling, tasty and known for its authentic flavors. Besides their massive tamales, other popular dishes include the chicharrones burrito and stuffed sopapillas. Open everyday from 7 am, the restaurant gets very busy during peak hours and currently only takes to-go orders by phone; you also have to be in the parking lot when ordering, which doesn't necessarily mean the wait will be any quicker. Go if you've got at least 30 min. to spare, otherwise come back between mealtimes and grab a dozen frozen tamales for last-minute cravings.
Get this: The tamale plate, 3 tamales topped with red chile, chile meat, cheese, lettuce and chips.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
