Mexican food might be a ubiquitous entity in Cali, but it doesn't all come equal. Seek out the good stuff at Tony's Jacal, a family-run institution in Solana Beach that's been around since 1946. Expect a huge menu of good ol' gut-busting faves, and just FYI: the free tortilla chips come with a super spicy salsa (you can sub pico de gallo, if desired). Locals rave about the chile relleno that's stuffed with cheddar cheese, battered and fried. Others come for the tasty shredded turkey tacos, which isn't something you can find everywhere. And if you've still never had the pleasure of eating sopes, they're worth coming back for.
Get this: Sope Plate, composed of a thick, small corn tortilla lightly fried, topped with beans, lettuce, tomatoes, queso fresco, sour cream, avocado and a choice of beef, ground beef, pork, turkey or chorizo.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
