Use them to make stock

...to make homemade vegetable stock! In fact, one week's worth of vegetable scraps can make several cups of stock. Simply freeze your scraps in a gallon-size Ziploc bag, adding to it until it's full. When you've collected enough scraps, place in a large stock pot with 13-15 cups water, 1 tsp whole peppercorns, 2 bay leaves and some fresh herbs. Bring to a boil, then reduce heat to a gentle simmer, and let it cook (uncovered) for around one hour, stirring occasionally. Strain the stock, then let cool and store in air-tight containers. You can keep it in the fridge for about a week, or in the freezer for 2-3 months.
