Add them to risotto

Add a parmesan rind to the broth used for cooking risotto. This will help thicken the texture naturally and progressively, without having to add tons of cream and grated parmesan at the end. Of course, you can still add both, but the flavor base of the risotto will be more complex than if you simply use broth on its own. 

Alternatively, you could add the rind directly to the risotto while stirring and adding the broth, letting it melt little by little and infuse the dish with its flavor. Remove the rind before serving.
