Bulgogi

Bulgogi literally translates to "fire meat", with the "fire" in its name referring to the traditional way the beef is prepared on a BBQ or stovetop griddle. It's made from thin, marinated slices of sirloin beef, although other meats like pork and chicken are also used. Enjoy with lettuce wraps, banchan or steamed rice.

Ingredients for 4 servings:

  • 1 lb beef (rump or ribeye)
  • 1/2 pear
  • 2 onions
  • 1 garlic clove
  • 2 scallions
  • 2 tbsp soy sauce
  • 2 tbsp sugar
  • 2 tbsp sesame oil
  • 1 pinch of salt
  • 4 tbsp vegetable oil
  • 2 tbsp toasted sesame seeds

Instructions:

  1. Cut the beef across the grain into very thin slices. You can opt to put the meat in the freezer for 15-20 min. beforehand, to make it easier to slice.
  2. Peel, core and chop the pear. Peel and roughly chop 1 onion. Peel and chop the garlic. Add the ingredients to a blender, and mix until finely pureed. Transfer to a large bowl.
  3. Clean and finely chop 1 scallion. Add to the pear puree with the soy sauce, sugar, sesame oil, salt and mix.
  4. Add the beef, toss to coat and marinate for 30 minutes in the fridge.
  5. Clean and cut the second scallion into rings. Peel and thinly slice the remaining onion.
  6. Heat the vegetable oil in a frying pan (or wok) on high heat until it starts smoking. Sear the meat in batches with the onions.
  7. Garnish the bulgogi with spring onions and sesame seeds, and serve.
  8. Enjoy!
