Brownies

A true American classic, these chunky, chocolate delights are a cut above any other tray-baked chocolate cake. Developed in Chicago in 1893, the cakes were originally intended for high society ladies who wanted smaller-sized sweet treats to be neatly packed in lunch boxes. 

Brownies still have that practical shape today, even if the orignal recipe (which actually contained no chocolate!) has changed a little.

Ingredients:

  • 1 1/2 cup dark chocolate (cut into chunks)
  • 1 cup + 2 tbsp butter
  • 3 eggs
  • 1 cup + 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 3/4 cup flour

Instructions:

  1. Preheat oven to 320°F. Grease a baking tray.
  2. In a small pan over low heat, melt the dark chocolate and butter. When fully melted, let it cool for 10 mins.
  3. In a bowl, whisk together the eggs, brown sugar, and vanilla extract until the mixture is thick and pale.
  4. Add the chocolate mixture to the egg mixture, whisking as you pour it in.
  5. Whisk in the flour until it has disappeared.
  6. Pour the batter into the baking tray and bake for 30 mins.
  7. Remove from the oven and allow to cool before slicing into individual squares.
  8. Enjoy!

INGREDIENTS:

  • 1 shortcrust pastry
  • 3 cups / 750 g. of cherries
  • 1/3 cup / 60 g. of sugar
  • 2/3 cup / 60 g. of almond flour
  • 4 tbsp. of brown sugar
  • Pistachios
  • A dash of milk

METHOD: 

  1. Mix the cherries and sugar together. Let stand 20 minutes.
  2. Spread or roll out the shortcrust pastry, sprinkle with almond powder and brown sugar.
  3. Place the cherries in the center of the dough, leaving about 2 inches of free dough on the edges. Fold in the edges.
  4. Brush with milk (this will make the crust go golden), sprinkle with brown sugar and bake for 20 minutes at 350°F/180°C.
  5. Top with a handful of chopped pistachios, and serve!
