Don't rinse in cold water!

You dinner guests call you to tell you they're running late, and your pasta is almost done cooking. So you take it out and rinse it in cold water to stop it from continuing to cook.

HUGE MISTAKE!

You've just rinsed away all of that delicious starch, the crucial ingredient that allows the pasta to stick to the sauce.

That's why the only time you should ever run pasta under cold water is if you're making a cold pasta salad. And even then, it's better to let the pasta cool on its own at room temperature.
