Honey Cake 

Delicious honey cake is a beloved treat that's enjoyed year-round in many parts of the world, including the Netherlands. With this recipe, you can easily make this delightful cake right at home:

 

Ingredients:

  • 1 cup honey
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 cup butter
  • 4 cups flour
  • 1 cup ground almonds
  • 1 packet baking powder (approximately 1 tbsp)
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp cardamom
  • 1/2 tsp nutmeg
  • A pinch of salt

Instructions:

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. Heat the honey, sugar, and butter with a small amount of water in a small saucepan until the sugar and butter are melted. Remove from heat and let cool slightly.
  3. Mix the flour with baking powder, spices, almonds, and salt.
  4. Beat the eggs and add to the flour mixture along with the honey mixture. Knead into a smooth dough. Add a little more flour if needed.
  5. Pour into the loaf pan and smooth out the top. Bake for about 50 to 60 minutes.

Combine summer zucchini with leftover mashed potatoes for a delicious, savory treat!

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
