Bruschetta with Goat Cheese, Figs, and Honey

The combination of figs, goat cheese, and honey is a classic. How about trying these unique bruschetta for your next buffet?

 

Ingredients (serves 3-4):

  • 10 slices of ciabatta
  • 4 slices of prosciutto
  • 1/2 roll of goat cheese
  • 2 figs
  • 3 tbsp honey
  • 4 tsp olive oil
  • 4 tsp balsamic vinegar
  • Salt & pepper
  • Herbes de Provence
  • Fresh basil leaves

Instructions:

  1. Preheat the oven to 300°F. Cut the goat cheese into 10 slices and quarter the figs.
  2. Drizzle each ciabatta slice with a splash of olive oil and 1 tsp of balsamic vinegar. Place a slice of goat cheese on each and drizzle with honey.
  3. Top with prosciutto and fig quarters, then sprinkle with Herbes de Provence. Lightly season with salt and pepper.
  4. Bake the bruschetta in the oven for about 5 minutes, until the goat cheese melts and the honey slightly caramelizes. Finish by adding fresh basil leaves on top and enjoy.

Tip: For vegetarians, these bruschetta are also delicious without prosciutto.

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
