Mini Quiches with Honey, Gorgonzola, and Walnuts

These delicious quiches are perfect as an appetizer, combining sweet honey with savory Gorgonzola.

 

Ingredients (serves 4):

  • 1 package puff pastry
  • 1 1/2 cups Gorgonzola
  • 4 canned pears
  • 3/4 cup heavy cream
  • 3/4 cup chopped walnuts
  • 2 eggs
  • 2 tbsp honey
  • Salt and pepper

Instructions:

  1. Cut the puff pastry to size. Grease and flour the tartlet molds, then line each with a piece of pastry.
  2. Remove the rind from the Gorgonzola and cut the cheese into small pieces. Mix together with the heavy cream and eggs until smooth. Season with salt and pepper to taste.
  3. Drain and dice the pears. Preheat the oven to 350°F.
  4. Distribute the pears evenly into the tartlet molds, then pour over the Gorgonzola cream.
  5. Sprinkle the walnuts on top of the tartlets and bake for about 25-30 minutes.

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
