Buffalo Chicken Dip

This game-day favorite combines tender shredded chicken, spicy buffalo sauce, and creamy cheeses for a bold, crowd-pleasing dip. Baked to bubbly perfection in a cast-iron skillet or casserole dish, it’s the ultimate indulgence for any Super Bowl spread. Pressed for time? Prepare the dip and store it in the refrigerator. Just throw it in the oven before the party starts!

Ingredients (for 8-10 servings):

  • 2 cups cooked, shredded chicken (rotisserie works great)
  • 8 oz cream cheese, softened
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1/2 cup buffalo hot sauce (such as Frank’s RedHot)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tbsp chopped green onions or fresh parsley (for garnish)

Instructions:

  1. Preheat oven to 375°F. Lightly grease a cast-iron skillet or small casserole dish.
  2. In a large bowl, mix the shredded chicken with cream cheese, ranch dressing, buffalo sauce, garlic powder, and onion powder until well combined.
  3. Spread the mixture evenly into the skillet or dish. Sprinkle cheddar and mozzarella cheese on top.
  4. Bake for 20-25 min. or until the cheese is melted and bubbly.
  5. Remove from the oven and garnish with chopped green onions or parsley.
  6. Serve warm with tortilla chips, celery sticks, or toasted baguette slices.

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
  9. Enjoy!
