Mexican Street Corn Dip

Inspired by elote, this bold, creamy dip brings all the flavors of Mexican street corn into one irresistible bowl. Made with roasted corn, cotija cheese, mayo, lime, and a touch of spice, it's the perfect dip for tortilla chips or fresh veggies at your game-day gathering. Try making it a hot dip by baking it at 375°F for 10-15 min. until bubbly!

Ingredients (for 6-8 servings):

  • 3 cups corn kernels (fresh, frozen, or canned, drained)
  • 2 tbsp butter or olive oil
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/2 cup crumbled cotija cheese (or feta)
  • 1 tbsp fresh lime juice
  • 1 tsp chili powder (plus more for garnish)
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp salt (or to taste)
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, finely diced (optional, for heat)
  • Tortilla chips, for serving

Instructions:

  1. Heat butter or olive oil in a skillet over medium-high heat. Add corn and cook, stirring occasionally, until lightly charred (about 5-7 min). Remove from heat and let cool slightly.
  2. In a large bowl, combine mayonnaise, sour cream, lime juice, chili powder, smoked paprika, garlic powder, and salt. Stir until smooth.
  3. Mix the roasted corn into the creamy base, then fold in crumbled cotija cheese, chopped cilantro, and diced jalapeño (if using).
  4. Transfer to a serving dish, sprinkle with extra cotija cheese, a dusting of chili powder, and more fresh cilantro. Serve with tortilla chips.

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
  9. Enjoy!
