7 steps to the perfect salad

Too much or too little dressing  can have disastrous results. For the perfect salad, you need to get the quantity just right. The basic rule is that for a classic vinaigrette, you should use 1 tablespoon of vinegar for every 3 tablespoons of oil. If you want a lighter salad dressing, replace some of the oil with plain yogurt or low-fat sour cream. If you want it to be a bit more acidic, then decrease the amount of oil to 2 tablespoons instead of 3.

The quickest way to make a salad dressing is to make it in the bottom of your salad bowl. Simply mix the oil, vinegar and seasonings together, then add the salad leaves on top and toss well when you're ready to eat.
