Here are some bright ideas: feta, mozzarella, Swiss or Cheddar cheese, tomatoes, bell peppers, carrots, fennel, onion, hearts of palm, corn, avocado, kiwi, ham, chicken, shrimp, tuna, scallops, salmon, anchovies, boiled eggs, lentils or sun dried tomatoes.
