Crispy Mini Chicken and Shrimp Spring Rolls

Prepare the ingredients

Put the rice noodles in a bowl, cover them in very hot water and let soften for 10 minutes.

Thinly slice the scallion, including both white and green parts.

Cut the chicken and shrimp into small pieces, making a roughly chopped mince.
