Have you ever tried roasted vegetable salsa? The charred veggies add an intense smoky flavor that brings out their natural sweetness as well. You can cook the vegetables in a grill pan, on a BBQ or in the oven. Try roasting garlic, pineapple, bell peppers, onions, chili peppers and tomatoes, then transfer to a food processor and blend with cumin, lime juice, olive oil and fresh cilantro until smooth. You can also keep the salsa chunky and lightly pulse instead. Season with salt and pepper to taste.
