Crusted filet mignon

If you've never tried crusted filet mignon, you've got something to look forward to. This fantastic meat dish is easy to make and comes out looking like a gourmet masterpiece. Start by brushing your filet mignon with a  layer of Dijon or whole-grain mustard on all sides. Season with salt and pepper. On a clean surface, unroll a prepared puff pastry crust. Place the filet mignon in the center, and wrap in the puff pastry in an airtight fashion. In order for the crust to hold together well, use a beaten egg. Brush the entire puff pastry crust with the egg so that it also takes on a golden brown color when cooking. Make two gashes on top so that steam can escape, and bake for about 20 minutes.
