Ham and cheese croquettes

Dad's never too old for crunchy finger foods! Make this savory appetizer for him to munch on with his beer. It's simple and delicious!

Prepare a béchamel or white sauce the night before. The day of, add 3 ounces cubed ham to the béchamel sauce, and mix well. Flour a clean work surface, and drop 2 tablespoons of the béchamel mixture onto it. Roll the mixture over the floured surface into a skinny link with a 4-cm diameter. Chop the dough link into 7-cm-long pieces. Repeat with the remaining béchamel, and freeze for 15 minutes. Coat the croquettes in flour again, shaking off any excess. Dip them in beaten egg and then breadcrumbs. Fry in oil heated to 340° F, three at a time. Turn continuously and remove when golden brown (about 3 to 4 minutes). Drain on a paper-towel-lined plate, and serve immediately.
