This recipe is hugely popular in France and by far one of the easiest and most delicious ways to prepare mussels. Serve this dish with some homemade French fries for a meal that is sure to please. Simply start by sauteing 1 onion in butter, in a large pot. Add 8 pounds of cleaned mussels, a bunch of fresh parsley, 1 cup white wine and a pinch of salt, then cover and let cook for about 10 minutes. Stir the mussels from time to time to make sure they cook uniformly. Serve as is in the pot, with the fries on the side.
