We all know the classic recipe for carbonara, but have you ever had it with mussels? To make this original variation, start by browning 1 onion in 3 tablespoons olive oil. Add some fresh thyme and a pinch of chili pepper. Add 2 pounds of cleaned mussels and 1 cup white wine. Let cook for about 10 minutes. In a separate pan, heat 1/2 cup ricotta cheese, 2 cloves minced garlic, 2 egg yolks and 3 sun-dried tomatoes. Mix well, then cook the spaghetti until al dente. When done, add the mussels and the sauce to the pasta and serve.
