Stuffed chicken rolls with ham and asparagus

Here's a tasty, original idea for sauteed chicken breasts. Cook 16 asparagus stalks in a lightly oiled skillet with 1 minced garlic clove for 5 minutes. Pound 4 chicken breasts to a thin, even thickness, and add 1/2 slice ham to the center. Lay 4 asparagus stalks on top of each breast, and sprinkle with grated Swiss cheese. Roll up, secure with a toothpick, and saute for 15 minutes, turning frequently. Serve with mashed potatoes.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
