Individual chicken pot pie

These mini chicken pot pies are savory pillows of goodness that are guaranteed to melt in your mouth. Poach 2 chopped chicken breasts in a large saucepan filled with water, 2 diced carrots, 1/3 cup peas, 1 chopped celery branch and a pinch of salt. Meanwhile, saute 1 chopped onion in a bit of oil until softened. Add 1/3 cup flour and 1/4 cup chicken stock. Stir well to combine. Divide the cooked chicken and vegetables evenly among 4 individual ramekins. Add the onion mixture, and top each with 1/4 of a puff pastry sheet (cut into circles). Bake for 30 minutes at 350 °F until golden.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
