Chicken burgers with Greek yogurt sauce

Chicken burgers are a juicy, lean protein alternative to the classic hamburger. Roughly chop 4 chicken breasts in your food processor. In a mixing bowl, combine the chopped chicken with 1 finely chopped onion and 1/2 cup bread crumbs. Mix well to combine, and form into 4 burger patties. Cook in the skillet until done. Cut 1 red onion and 1 red tomato into thin slices. For the yogurt sauce, stir together 1 plain Greek yogurt, 1 tablespoon lemon juice, 2 minced garlic cloves, 1 tablespoon finely chopped parsley, 1 tablespoon finely chopped mint and 1/2 teaspoon salt. Heat the burger or sandwich buns, and assemble as follows: Bottom of the bun --> Lettuce --> Chicken burger --> Greek Yogurt sauce --> 1 or 2 slices of red onion --> 1 or 2 tomato slices --> Top of  bun. Feel free to add extras: a slice of your favorite cheese, crispy bacon strips, etc. Serve with fries or a small garden salad.

  3. Fold up tortillas, and heat in a frying pan until golden.
