Cheesy baked chicken and mushrooms

Hosting a dinner party and need an easy, crowd-pleasing appetizer? Try this satisfying chicken and mushroom dish. Cut 2/3 pound chicken breasts into cubes and lightly season with salt and pepper. Saute in a bit of oil until cooked through, and set aside. Cook 4 cups thinly sliced mushrooms in the same skillet until browned and softened. Return the chicken to the pan, and stir. Distribute the chicken-mushroom mixture in individual ramekins, top with bechamel sauce and sprinkle on shredded Cheddar or Swiss cheese. Bake for 10 to 15 minutes at 350 °F in a preheated oven.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
