Popcorn chicken

This popcorn chicken recipe will be a hit with the kids. It's easy to make and although fried, it's still healthier than the drive-thru kind. Mix 3 chicken breasts with finely chopped parsley in a food processor. Crush 1 1/4 cups unsweetened corn flakes with a rolling pin. Shape the chicken mixture into balls, dip in a beaten egg, then roll in the crushed corn flakes. Cook in frying oil heated to 375 °F. Tip: For spicy popcorn chicken, add 1 tablespoon Tabasco sauce (or other hot sauce of your choice) and 2 small minced chili peppers to the chicken mixture.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
