Savory chicken tart

Here's a tasty way to use up extra chicken breasts. Cut the chicken into strips, and cook in a buttered skillet. Spread out 1 rectangular ready-made puff pastry crust, and top with the cooked chicken, 1 can of chopped artichokes and 1 small can of mushrooms. Beat 3 eggs with 1 1/2 tablespoons sour cream and a bit of salt and pepper. Pour over the tart, and bake for 30 to 35 minutes at 350 °F. Tip: Add any other vegetables you like, to bulk up the nutrient content: cooked broccoli, peas, sweet corn, etc.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
