Sweet and sticky caramel chicken

Caramel chicken is the perfect recipe for sweet-and-sour lovers. Saute 1 3/4 pounds diced chicken breast in a lightly oiled skillet. Set aside. In the same skillet, add 2 finely chopped onions, 2 minced garlic cloves and 1 finely chopped shallot. Cook until onions and shallots are softened. Return the chicken to the pan, and pour in 4 tablespoons soy sauce + 3 tablespoons honey. Let cook for about 15 minutes on very low heat until the sauce caramelizes and obtains that irresistible sticky texture. Serve with white or brown rice.
