Classic chicken Cordon Bleu

Homemade chicken Cordon Bleu cooks up quickly and tastes so much better than prepared frozen versions. Butterfly the chicken breasts, and slip in 1 slice of deli ham or bacon and 1 slice of Swiss cheese. Close up the breast, then dip the chicken into a beaten egg and coat with breadcrumbs. Cook in a skillet for 5 minutes on each side until golden. Tip: For an interesting flavor trip, substitute diced blue cheese or sliced Brie for the Swiss cheese.

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
