Stuffed chicken quesadillas

Cure your Mexi-cravings with this healthy and delicious quesadilla recipe. Saute 1 chopped onion and 2 diced chicken breasts in a skillet coated with cooking spray. Add 1 2/3 cups fresh spinach and 2 diced tomatoes. Let stew for 5 minutes, and season to taste. Stir in 1 small can of corn. Lay 4 tortillas on a greaseproof paper-lined baking sheet, add the fillings, and top with shredded Cheddar cheese. Fold each tortilla in half. Bake for 10 minutes in a preheated oven at 350 °F. Serve with fresh pico de gallo.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
