Looking for a fast dinner idea that requires minimal clean up? This yummy recipe comes together in a pinch. In a skillet, saute bell peppers (cut into strips) with some olive oil. Cook for a few minutes and add sliced chorizo, 1 sliced zucchini and 1 can of crushed tomatoes. Cook for about 15 minutes. Carve out a hole in the center of the veggies, and break an egg into it. Heat until the egg is cooked through. Serve piping hot with fresh bread on the side for dipping.
