You can't go wrong with this trusty Spanish tapas dish. Rinse, peel and cut the potatoes into bite-size cubes. Saute them in a lightly oiled skillet for about 15 minutes before adding 1 chopped onion. Return to medium heat and let cook for about 5 minutes. Meanwhile beat 5 whole eggs with a fork and season with salt and pepper. Add a dash of paprika for extra flavor. Pour the mixture over the potatoes and cook on low heat until golden brown, flipping halfway through. Cut into cubes and serve warm or cold.
