This comforting dish can be put together in a jiffy with only a few pantry essentials. Saute 1 pound ground meat in a large saucepan with a drizzle of oil. Add 2 chopped onions, 1 minced garlic clove, and season with salt and pepper. Add 1/2 diced bell pepper, 1 teaspoon cumin, 1/4 teaspoon Cayenne pepper, 2 teaspoons tomato paste, and a bit of thyme and rosemary. Pour in 10 ounces crushed tomatoes, and stir well to combine. Finally, add 1 1/2 pounds cooked red beans. Fill the pan halfway with stock, and simmer for 45 minutes on low.
