One-pot pastas are what's hot right now, and it's not hard to guess why. Here's our take on the trend: Wash zucchini and cut into matchsticks. Do the same with carrots. Add the vegetables to a high-sided pot with spaghetti or other long pasta noodles, and pour in cooking broth to fill half the pot. Bring to a boil, and let cook for about 10 minutes or so. Cook until the pasta is al dente, and the broth is reduced. Serve straight out of the pot and garnish with grated Parmesan.
