Fajitas are a great one-pan option for busy home cooks. Here's our recipe: Cut 1 pound boneless skinless chicken breasts into strips. Cook for 3 minutes on both sides in a hot pan with olive oil. Set aside. Add a little more olive oil to the same pan, and saute multicolored bell peppers sliced into strips with 1 finely cut onion. Let cook for about 15 minutes on medium heat, stirring frequently. Season to taste with salt, pepper and paprika. Once the vegetables are softened, add the chicken and cook for a few more minutes until heated through. Serve hot with fresh flour tortillas and other toppings (guacamole, shredded cheese, salsa, etc.).
